Culinary Challenge

I'm co-hosting a wedding shower and need to come up with some very low-carb dishes, out of respect for our dilligently dieting bride. She doesn't really enjoy vegetables or fruit. She does eat chicken. And apparently lots of it.

Generally speaking, "low-carb" isn't something I'm good at. I could do a lot with veggies, but she won't eat it. This is one of the hardest culinary challenges I have ever faced.

Chicken cordon bleu, unbreaded. There's a small amount of carbs in the mozzarella, but nothing major. I mowed DOWN on some chicken cordon bleu when I was low-carbing.

Try a meat and cheese tray. Summer sausage is fantastic, and you could pair it with smoked cheddar. Or try wraps, with chicken, cheese and bacon. Yum!

I know we're having a cheese tray and some sort of chicken and cheese casserole thing that the other hostess is making, and some sort of salad. I bet I could come up with some sort of cordon bleu wrap, which would make smaller servings, so i could make enough of them.

Oh, there are multiple parties. Three more on my calendar so far. And the bride has lost 30 pounds since June, requiring major alterations on the dress (a good thing!) and I refuse to be the one that tempts her to gain any of it back!

You can get low-carb tortillas in stores, as well as low-carb bread.

No tomatoes in the salad. The dressing should be oil and vinegar only.

have you tried googling low-carb appetizer recipes?

I can't help you... I'm all about carbs. I'm a carbaholic. Carbalicious. Carbtastic. Carbmania.

Oh I've googled, I've yahooed, I've searched every recipe site I have bookmarked and two dozen magazines. I had a great menu planned out, with chocolate covered strawberries and salsa with homemade low carb pita chips and artichoke dip and blah blah blah, when I was told that none of that would work because she doesn't like vegetables or fruit much, she pretty much just eats chicken and shrimp (which I wouldn't try to transport since the shower is out of town). I've been stumped ever since. But I'm going to experiment with the chicken wrap idea.

And I'm a bit of a carb junkie myself, so this is pretty new ground for me!
